Is Santan Bad For You?
The Truth About Coconut Milk

Bismillah. For years, sisters were told the same thing at the clinic and at the kenduri: kurangkan santan. So we skimmed it. We feared it. We blamed it.

And we kept the rice. Sister, let me show you why that was exactly backwards.

How santan became the villain

For a whole generation, the message was simple. Fat makes you fat. Fat clogs the heart. And in a Malay kitchen, the most visible fat in the pot is santan, white and rich and floating on top of the lemak.

So santan took the blame. Sisters started cooking with less of it, skimming it off, or swapping it for evaporated milk. Some stopped cooking lemak altogether. And through all of that, the mountain of white rice on the plate never moved.

Here is what nobody explained: your blood sugar does not rise from fat. It rises from glucose. And the biggest source of glucose on that plate was never the santan.

Fear the rice, not the coconut.

What santan actually is

Santan is grated coconut flesh, squeezed with water. That is all. What comes out is mostly fat and water, with a little protein and very little carbohydrate.

The fat in coconut is mostly saturated fat, and a large share of it is lauric acid, along with smaller amounts of the medium chain fats your liver can turn into fuel quickly. You will see coconut sold as a miracle food online. It is not a miracle, sister. It is simply a fat, and a fat that our neneks cooked with for generations, long before diabetes clinics were full.

The science, plainly

Your body handles the three big nutrients differently. Carbohydrate breaks down into glucose and raises your blood sugar. Protein raises it a little. Fat barely raises it at all. When glucose rises, your body releases insulin, the hormone that stores. A plate that is mostly fat and protein asks for very little insulin. A plate that is mostly rice asks for a lot. That is the whole story of insulin resistance, told in one pot.

What santan does to your blood sugar

On its own, plain santan barely moves your glucose. There is so little carbohydrate in it that there is almost nothing to turn into sugar.

It does something useful as well. Fat slows how fast your stomach empties. So when santan is part of a meal, everything in that meal reaches your blood more slowly. That is part of why a lemak dish with protein keeps you full and steady, while a plate of plain rice leaves you hungry again by three in the afternoon.

There is one honest exception. Some santan recipes add sugar or gula melaka to the pot. Then the dish does raise your blood sugar, not because of the coconut, but because of the sugar. The santan was innocent. The spoonful of gula was not.

What the rice beside it does

Now look at the other side of the plate. A normal mound of white rice is almost pure starch, and starch breaks down into glucose quickly. Within minutes your blood sugar climbs, and insulin comes in to store it.

Do that at breakfast, lunch and dinner, for fifteen years, and your cells slowly stop listening to insulin. Your body makes more and more of it to get the same job done. That is insulin resistance. Left long enough, that is type 2 diabetes.

So for all those years we skimmed the santan, the one ingredient that was not spiking us, and kept the rice, the one that was. That is not your fault, sister. That is what we were taught.

The honest part about cholesterol

I will never tell you only the half that sells, sister. Here is the other half.

Santan is high in saturated fat, and in some people, saturated fat raises LDL cholesterol. Not in everyone, and not by the same amount, but it can happen. Bodies respond differently, and your numbers are the only honest judge of yours.

So if you already have high cholesterol, heart disease, or a strong family history of it, do not take my word or anyone's word from the internet. Ask your doctor for a full lipid panel, change your food, and let them check it again in a few months. Watch your numbers, not the headlines.

Sister, hear me

This is food and mechanism, not a promise, and I am a keto coach, not your doctor. If you are on medication for diabetes, blood pressure or cholesterol, never stop or change it on your own. When your food changes, your numbers can move, and your dose is your doctor's call to adjust, with you. The kitchen walks beside your medical care, never instead of it.

Three things you can do tonight, for free

You do not need to buy a single thing from me to start. Take these into your own dapur tonight. They are yours.

1. Stop skimming the santan. Shrink the rice instead.

Cook your lemak or your opor exactly the way your family loves it. Leave the santan in. Then serve it with half the rice you normally would, or better, swap the rice for cauliflower rice or konjac.

Why: the santan slows the meal down and keeps you full. The rice is what spikes you. Keep the part that helps, cut the part that harms.

2. Read the santan label, and leave out the gula.

When you buy santan, check the back of the pack. Coconut and water is what you want. If sugar is on the list, put it back. And when a recipe calls for a spoon of sugar or gula melaka, try it without tonight.

Why: sugar in the pot is the one way a santan dish turns into a blood sugar dish. Remove the sugar and the coconut goes back to being a fat that barely moves your glucose.

3. Eat the protein and the lauk first, then decide on the rice.

Start your meal with the ayam, the ikan or the daging in its santan gravy. Eat slowly. Then ask yourself honestly if you still want the rice.

Why: protein and fat make you full, and fullness is what quiets the hand that reaches for a second scoop. Most nights, you will find you need far less rice than you thought, and some nights, none at all.

If you do only those three things and nothing else, your evening plate is already healing. May Allah make it easy for you, Amin.

If you want someone to cook it for you

Knowing what to do is not the same as having the time to do it, and I will not pretend otherwise.

You have children. You have work. You come home tired, and at six in the evening the honest question is not what is metabolically optimal. It is what is fastest. And that is exactly how the white rice creeps back onto the plate.

That is why I cook. Kyla With Keto is Singapore's first and only halal keto nasi campur. Heritage Malay and Indonesian dishes, the santan and the rempah kept in, cooked fresh daily, zero preservatives, zero sugar, no rice mound, served on konjac. I am a certified keto coach, and I do the heavy lifting. You eat.

Questions sisters ask me

Does santan raise blood sugar?

Plain santan barely moves it. It is mostly fat and water, with very little carbohydrate. What raises your sugar in a santan dish is usually the rice beside it, or sugar added to the pot.

Is santan keto?

Yes. Unsweetened santan is very low in carbohydrate and high in fat, which makes it one of the most keto friendly ingredients in our kitchen. Lemak, opor and rendang all fit a keto plate when there is no sugar in the pot and no rice mound beside them.

Is santan bad for cholesterol?

It is high in saturated fat, and in some people that raises LDL cholesterol. Bodies differ. If you already have high cholesterol or heart disease, ask your doctor to watch your full lipid panel as your food changes.

Should I skim the santan off my curry?

On a keto plate, no. The fat keeps you full and slows the meal down. Skimming the santan while keeping the rice is the opposite of what helps your blood sugar.

Is carton coconut milk the same as santan?

Not always. Many carton coconut drinks are watered down and some are sweetened. For cooking, choose plain santan with only coconut and water on the label.

Qur'an 23 : 51
كُلُوا۟ مِنَ ٱلطَّيِّبَٰتِ وَٱعْمَلُوا۟ صَٰلِحًا
Kuloo mina at-tayyibati wa'maloo salihan
"Eat from the good things and do righteous deeds."

The plate is the effort. Allah is the Shafi. Biiznillah.
